Founded in 1986, our company located in the heart of beautiful Auvergne, birthplace of the French cutlery tradition, had as its main activity the subcontracting of cutlery as well as the maintenance of cutting tools for the rubber industry.
From the 1990s,
we became interested in the sector of the
food processing industry
by manufacturing blades for automatic machines in the meat sector. Following this, we launched
a range of professional knives
that we market directly to French user companies. This choice allowed us to become
a major player
in the national market and to always innovate.

DASSAUD FILS places great importance on the quality of its products. To meet the quality requirements of its customers, the company has developed test series (cutting force control test bench, hardness measurement, micrography, dimensional control...) that guarantee optimal monitoring of quality throughout the manufacturing process.

Integrated manufacturing in France
Production carried out in Courpiere, Auvergne, from blade to handle. Complete control of all steps to ensure consistency, responsiveness, and manufacturing quality.
Traceability and quality control per batch
Each manufacturing batch is identified and controlled at each step: material, treatment, geometry, and finish. A guarantee of consistency, batch tracking, and reliability over time.
Selected European steels
Stainless steels from European suppliers, with controlled composition and stable mechanical properties, suited to the demands of food processing trades.
Controlled heat treatment
Controlled quenching complemented by cryogenic treatment, ensuring a stable metallurgical structure, good edge retention, and even wear.
Finishing adapted for food environments
Surface finish optimized to limit material adhesion, facilitate cleaning, and meet hygiene requirements in food processing environments.
Consistent and reproducible geometry
Controlled blade profiles and geometries to ensure identical behavior from one knife to another, facilitating workstation standardization.

The Securicoupe knife range to meet a growing need for safety. This model guarantees optimal safety for the dominant hand and comes in 3 sizes. In the following years, European manufacturers also integrated this type of knife into their range.

L'X Fil®
X Fil, the first crossed-rod sharpener, entirely in stainless steel, composed of 3 independent rods. Easy to use and maintenance-free, it guarantees the sharpening quality of a honing steel. The idea has since been adopted by our colleagues.
Caribou UltraGrip Comfort
The Caribou UltraGrip range, knives with a handle featuring side reliefs. Designed to meet the new safety conditions in food industries (dominant hand protected by a cut-resistant glove), this handle features side reliefs that naturally adhere to the glove mesh, preventing slipping and reducing musculoskeletal disorders through reduced gripping.
